SALMON WITH HERBED BREADCRUMBS AND ORANGE MAYONNAISE

Serves: 1 person
Ingredients:
1 salmon fillet, about 1 lb
Salt
Evoo
Ingredients for the breadcrumbs:
One cup breadcrumbs
150 grams parsley (about 2 tablespoons)
A bunch of favorite fresh herb
Evoo
Salt
Place the fresh herbs (except the parsley) in the oven at 300F until dry. Then, place all the ingredients in a food processor and pulse until well combined.
Ingredients for the mayonnaise:
1 egg
Seed oil, as needed
1/2 lemon, juiced
1 tablespoon white wine vinegar, warm
The zest of one orange
Salt to taste
To prepare the mayonnaise. Add the egg to the bowl of your food processor (you can also use an immersion blender) and process for about 20 seconds. Slowly add the oil, in tiny drops. Add the warm vinegar as well as the lemon juice and keep processing until creamy. Season with salt and orange zest.
Assemble the dish:
Heat a little oil in a medium sauté pan, sear the salmon all around. Season with salt.
Bread the salmon in the herbed mixture. Serve with the orange mayonnaise.
Chef Fabio’s cooking tips:
These are my favorite herbs for the preparation of the herbed breadcrumbs: lemon balm, thyme, lemon thyme, parsley, rosemary and lavender.
To make a creamy and dense mayonnaise, I always heat the vinegar in a small pot first. This helps cooking the protein of the egg and it will make a nice emulsion.
Salmon gets dry very easily so make sure you cook for just a few minutes (depending on the thickness) to keep it pink and moist in the center.
