Gabriele says: “some of the best memories from my childhood are from the camping resort in Marina di Bibbona that my family used to own. There I learned how to make my first espresso with a professional machine, receiving a lot of compliments from le belle signore who made me feel proud of what I was doing at 10 years old. Helping my family at their restaurants gave me the chance to experience the joy of hospitality: making customers happy. After graduating from Istituto Alberghiero in Rosignano I started my career in the industry. I have worked for many Michelin star restaurants — Enoteca Pinchiorri in Firenze with Chef Italo Bassi, Da Vittorio in Brusaporto with the Cerea Family, Marconi in the suburbs of Bologna with the Mazzucchelli family, La Pineta with Luciano Zazzeri, and Villa Crespi with Antonino Cannavacciuolo. Through my work experience as maitre di sala I have learned that respect for family traditions as well as the customers' satisfaction are the main keys to being successful in the fine dining industry.  I learn something new every day, in addition to being maitre di sala and a sommelier, I have explored the tea world becoming a tea sommelier and I was just awarded as the best Cameriere di Sala under 30.”
